Apple Walnut Cake

Ingredients


	3 eggs			1 t. baking soda			

	2 C. sugar		1 t. cinnamon

	1 1/2 C. Corn oil	1 T. vanilla

	3 C. flour, sifted	1 1/2 C. walnut pieces

	1/2 t. salt		3 C. grated apples,

				  loosely packed

Sift together the flour, salt, soda, and cinnamon. Mix corn oil and sugar until smooth. Blend in eggs and vanilla. Add apples and nuts. Fold in flour. When thoroughly blended, pour into a greased tube pan and bake at 325 degrees for one hour. Cool before glazing.

Glaze:


	1 C. brown sugar

	1/2 C. butter, or 1/4 C. evaporated milk

Melt butter in heavy saucepan, add sugar and bring to a boil for 3-4 minutes, stirring constantly. Immediately pour over top of cooled cake.
