Barley Roast
Ingredients
1/2 C. butter 1 3/4 C. barley
2 onions,chopped 4 oz. mushrooms, chopped
5 C. hot water 1 can mushroom soup
6 Pkgs. light G. Washington broth 1/2 C. nuts, chopped
1/2 C. cheese, grated
Brown barley in 1/4 C. butter, add broth and hot water. Melt
remaining butter in another pan and saute onions and mushrooms.
Combine the two mixtures and add the soup. Pour into 9" x
13" baking pan and bake at 350 for 1 1/2 hours. Sprinkle nuts
over the top and bake for another 1/2 hour. 10 minutes before it is
done, sprinkle cheese over top.
