Boursin Potatoes ala Barbara
Ingredients
2 C. whipping cream
1 5 oz. package boursin cheese with herbs
3 lbs. red new potatoes, unpeeled, scrubbed, thinly sliced
1 1/2 T. chopped fresh parsley
Preheat oven to 400 degrees. Butter 9x13x2 inch baking dish.
Stir whipping cream with cheese in large saucepan over medium
heat until cheese melts and mixture is smooth. Arrange 1/2 of
potatoes in baking dish in overlapping rows, generously season
with salt and pepper. Pour 1/2 of cheese mixture over the
potatoes and repeat potatoes, cheese, etc. Bake until top is
golden brown and potatoes are tender, about 1 hour. Sprinkle
with chopped fresh parsley and serve.
