Aunt Evelyn's Carrot Cake

Sift together three times:



     3 C. flour				1/2 t. nutmeg		

     2 C. sugar				1/4 t. ginger

     2 t. cinnamon		        1 T. baking powder

     1 t. salt				1 T. baking soda


Add to, and mix well:



     1 1/2 C. salad oil			2 C. grated carrots, 

     1 C. buttermilk			     tightly packed			

     4 beaten eggs			1 C. walnuts, finely 

     2 t. vanilla 			     chopped


Pour batter into a greased and floured 9" x 13" baking pan, and bake at 350 degrees 45 minutes - 1 hour.
Great served with some slightly sweetened whipped cream, or you can frost it with buttercream or cream cheese frosting to which 1 t. instant coffee has been added,
