Green Chili Rice
Ingredients
4 C. Cooked Rice
1 - 2 cans diced green chiles
1 pint sour cream
2 C. grated cheddar or longhorn cheese (or more to taste)
Salt and pepper rice, to taste. Mix sour cream with rice.
Grease casserole dish. Layer: rice mixture, chiles, cheese.
Bake covered in 325 degree oven for 45 minutes, the last 15
minutes uncovered. May also mix chili with rice, instead of in
layers. It's better if prepared one day ahead and then
baked.
