Sweet Potato and Coconut Soup

Ingredients


	3 C. Chicken flavored or	1 t. salt

	     vegetable broth		6 peppercorns

	1 medium onion, quartered	1 1/2 lbs. sweet potatoes or

	1 large stalk celery, with 	  yams, peeled and cubed

	  leaves, chopped		2 C. frozen coconut milk, thawed

	2 allspice berries		1/4 C. chopped cilantro or parsley

	2 bay leaves			1/4 C. toasted coconut

	6 whole cloves

Add broth, onion, celery and seasonings to medium saucepan and simmer, partially covered, for 20 minutes. Strain broth into large saucepan and add cubed sweet potatoes. Simmer, covered, 20-30 minutes or until potatoes are soft. Cool before pureeing in small batches in processor or blender. Transfer to a container and stir in coconut milk. Refrigerate for several hours or up to 4 days before serving.
