Won Ton

Ingredients

14-16 oz. ground gluten, homemade or commercial
1 small onion, chopped fine
2 dried mushrooms, rehydrated and chopped
salt to taste
2 eggs
ginger to taste
1 small can water chestnuts, chopped
1 package won ton skins

Mix thoroughly, all ingredients, except won ton skins. Put a generous teaspoon of filling mixture in middle of won ton skin, and moisten edges with water, fold diagonally to form triangle, and press edges firmly to close (make very sure that the edges are completely sealed, or they will burst open during cooking). Deep fry and serve with duck sauce.
